Wow. Just came across this topic.

Thank you Mehreen. Actually I own Punjabi, so to say anything specific would be self promotion, so I shall not talk about my restaurant, but the food on the whole.

Pakistani and Northern Indian food have much more similarities than northern and southern Indian, where the basic ingredients change totally. My favorites for Pakistani / Indian food (beside mine of course) are the Taj Pavilion and I have eaten at Mughals a few times and liked it too. I feel these are most authentic for the flavors and also cooked the best. Not too much oil, not too many artificial flavors, etc.

Regarding Okra (lady finger) or "Bhindi" in Hindi, it IS available but only seasonally, and IS very expensive. Jenny Lou has it some times, for as much as 54 rmb / Kg. But at times it can be found at the local market. The Chinese name is called "qiu kui" .

Each restaurant has it's own charm, and restaurant cooking and home cooking is always different due to the richness of the sauces of the main base while cooking. Restaurants usually prepare the raw material of 3-4 different (curries) as a base, and then do the final cooking when the order comes. The main difference of flavor between restaurants, is the freshness and quality of ingredients used in making these "curries"

Northern Indian / Pakistani food has more of dry BBQ dishes than in the South of India. Also, northerners eat more wheat and flour (breads, naans, roti, paratha) as compared to the south, where Rice is a staple diet . Quite similar to China!

Ok.. That was a long post. Some more information about Northern Indian culture (many things similar to Pakistan) and food can be found here on this CCTV kids program done by an Indian teacher here in Beijing and I. But it's all in Chinese (Mandarin).

There are some articles about different dishes on a famous Beijing Food blog (but its mostly covers Punjabi), still a fun read about the food.

There is also a very informative post on TheBeijinger from the owner of Mughal Pakistani restaurant, which I just came across (from 2009)
